How to chose the
perfect sake

Prefecture
Differing natural resources in various Japanese prefectures (ie elevation of the land, water hardness, climate, rice grains and soil quality) can affect the sake you're about to enjoy!

Flavour
Sake is assessed terms of go-mi or five flavours: karami (dryness), nigami (bitterness), shibumi (astringency/tartness), amami (sweetness) and sanmi (acidity). Good sake depends on its character or simply the drinker's preference. You like what you like, after all!

Polish
Rice polishing is the first and most vital step in sake-making. The polishing rate is the % of grain remaining after polishing. Sounds complicated, but just remember: The more you polish, the lower the polishing ratio and, generally, the "purer" the sake.
