Junmai Sake

Junmai is a premium Japanese sake that's made using only rice, water, and koji mold. Unlike other types of sake, Junmai has no added alcohol or sugar.

To make Junmai, rice is first polished to at least 70% of its original size to remove the outer layer, then steamed and mixed with koji mold to convert starches into sugars. The mixture is then combined with water and yeast to undergo fermentation.
